Originating in China, peaches reached the Middle East via trade over the Silk route. They were later introduced to the European culture by Alexander the Great. The Romans called them 'Persian Apples'. The Spanish explorers brought them into the English and French courts where they were credited as a rare delicacy. Peaches finally found their way into the United States in the 17th century, through George Minifie who planted them at his estate in Virginia. But it was only in the 19th century that commercial peach production began in Maryland, Delaware, Georgia, and Virginia.

How to Make Fresh Peach Nectar

☀ Sort the peaches according to their ripeness; use only ripened ones as they blend easily.

☀ Dip them in boiling water for 10 to 60 seconds. Ripe peaches require less time (only 10 seconds). Use a wire cage to easily dip the peaches in water.

☀ Remove the peaches from boiled water and put them on a clean pan to remove the skin. If they are properly done, the skin easily slips off.

☀ Trim off the bad spots with a knife. Then split the peach and remove the pit to clean out the center. Put them in slightly salted water in a bowl for a while before blending.

☀ Put the peaches in a blender to make a thick puree. Add water if needed.

☀ Strain the puree through a sieve and store in clean sealed jars in the refrigerator.

Ingredients
☀ 2 oz. Peach Nectar
☀ 1 tsp. fresh Lemon Juice
☀ 1 oz. Peach Schnapps
☀ 3 oz. chilled, Dry Champagne
☀ 1/2 cup crushed ice

Method
☀ Mix peach nectar, lemon juice, and peach schnapps in a chilled champagne glass. Add the 1/2 crushed ice and then the champagne.

Ingredients
☀ 12 oz. Peach Nectar
☀ 12 oz. Mango Nectar
☀ 2 Pitted Peaches
☀ 1½ oz. Triple Sec
☀ 1 oz. Vodka
☀ 3 oz. Peach Schnapps
☀ 1 oz. Mango Rum
☀ 1 oz. Mango Liqueur
☀ 1 oz. Tequila
☀ 4 oz. Irish Ice cream

Method
☀ Pour all the ingredients in a blender with enough ice and blend at a low speed for 2 minutes. Serve chilled.
